Otoro is the fattiest part of the belly. It is red with white color distributed throughout and the meat of the pieces with especially high fat content are more white. The closer to the fish’s head, the stronger the fat and the meat closer to the tail has weaker fat. The rich umami of the fat spreads through the mouth. Otoro fetches the highest price and at sushi restaurants, it is treated as a high-end sushi topping.
